Cheat Day Indulgence: Carb It Up!


We know that for most, summer time means eating light and healthy; there’s nothing like a cool, crisp salad on a warm summer day! But every once in a while, a cheat day feels so good. And we think you deserve one! Indulge in our decadent, delicious, downright dangerous Sweet Twister™ Mac n Cheese!

This Roger Mooking creation combines the flavor rich Sweet Twister Pepper™ with creamy, ooey-gooey, Mac n Cheese. Perfect for your cheat day, this dish is sure to fill that summer induced carb void!

Sweet Twister™ Mac n Cheese
Serves 4


2 cups dry macaroni
1 tablespoon olive oil
1/2 cup onion, finely diced
1 garlic clove, minced
1 cup Sweet Twister™ pepper, finely diced (reserve 1 tablespoon for garnish)
1/4 cup unsalted butter
1/4 cup all-purpose flour
1 3/4 cup whole milk
1 teaspoon kosher salt
1/4 teaspoon freshly ground black peppercorns
1 cup grated medium cheddar


Prepare macaroni according to package instructions. Keep warm.

In a medium pot over medium high heat, add olive oil and sweat onion and garlic until soft and translucent, about 3-4 minutes. Add Sweet Twister™ pepper and sweat until soft, another 3-4 minutes.

Add butter and stir to melt, then add flour and continue stirring until flour has evenly coated vegetables. Toast mixture, stirring occasionally, until flour is cooked out and fragrantly nutty, about 5 minutes. Whisk in milk in a steady stream and bring up to a simmer. Adjust heat to medium low and continue to gently cook, stirring occasionally, about 6-8 minutes. Sauce will be a creamy blush color and slightly thickened. Remove sauce from heat and stir in grated cheddar, melting in gently with residual heat.

Toss cooked macaroni with finished sauce and season with additional salt and pepper as needed. Garnish with reserved diced Sweet Twister Pepper. Curl up on the couch and enjoy!
