Greek Cucumber Boats
5 mini cucumbers
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
¼ teaspoon garlic powder
pinch black pepper
2/3 pint Angel Sweet® tomatoes
½ cup black olives, diced
3 ounces crumbled feta cheese
Cut cucumbers in half lengthwise, then remove seeds using a small spoon. Set aside.
In a medium bowl, whisk olive oil, red wine vinegar, garlic powder, pepper, and salt until emulsified. Toss with Angel Sweet® tomatoes, olives, and feta cheese.
