When it comes to football, I’m 50/50- 50% there to actually watch the game, 50% there for the food. Ok fine, 40/60. Suffice it to say that game day finger foods are one of my favorite indulgences. And, as we firmly believe, the cheesier the better, especially when it comes to dips. But, you know, balance is key, so we’ve topped this ooey, gooey dip from Broma Bakery with the best assortment of roasted tomatoes. It’s beautiful enough for dinner parties, but perfectly indulgent to top off your game day spread. Best of all? It takes a mere ten minutes to prep, so you’ll never miss a play.
Baked Goat Cheese & Herb Roasted Tomatoes
Prep time: 10 minutes Bake time: 45 mins
For the goat cheese dip: 16 ounces goat cheese, room temperature 1/2 cup cream cheese, softened 1/2 cup grated Parmesan cheese
For the roasted tomatoes: 1.5 lb Wild Wonders™ tomatoes 2 tablespoons olive oil 1 tablespoon fresh thyme leaves 1/4 teaspoon salt
Directions Preheat oven to 400°F. Grease a medium-sized casserole dish and a large cookie sheet. Toss Wild Wonders in olive oil, thyme leaves, and salt. Place on cookie sheet and roast for 45 minutes, stirring gently halfway through. While tomatoes are roasting, prepare goat cheese dip. In a food processor, whip goat cheese, cream cheese, and Parmesan until light and fluffy, about 1 minute. Spread mixture into prepared casserole dish. While tomatoes are roasting, place goat cheese dip in oven. Bake for 25 minutes. When ready to serve, top dip with roasted tomatoes and serve alongside thick crackers, tortilla chips or toasted baguette slices.
